The only flight simulator available natively in MacOS is X-Plane, but it's scenery is sadly nowhere near as detailed as FSX (It is about 5 years or more behind in this regard).
Other people will use 3D landscape programs in conjunction with the sim aircraft to produce a different environment for shots, and people like Myslef and John MacKay have been creating a "virtual live action studio" to use within a sim (green screens and all) that allows us to composite many things (such as in the sr71 vid).
